Australian Native Vinaigrette

A distinctly Australian take on the classic vinaigrette, showcasing native ingredients that celebrate the coastal landscape. Finger lime brings bursts of vibrant citrus and a subtle effervescence, while Tasmanian pepperberry offers a gentle warmth and berry-like spice that lingers on the palate. This vinaigrette is bright, aromatic, uniquely local and crafted to complement oysters with a sense of place and a flavour profile unlike anything else on the market.

Yuzu Sesame

Yuzu Sesame Vinaigrette

A bright, citrus-forward Japanese-style vinaigrette. Balanced and refreshing, it brings a vibrant lift to freshly shucked oysters, sashimi and crudo. The aromatic sesame adds depth and richness, while the tart yuzu cuts through the brine of the oyster, enhancing its natural sweetness without overpowering it. At Oh My Oyster, sustainability is at the heart of everything we do. From the farmers we work with to the ingredients we choose, our mission is to celebrate oysters and the ecosystems that make them possible.

 

Oysters are nature’s own water filters. A single oyster can clean up to 190 litres of water a day, and supporting their cultivation helps restore coastal environments and promote biodiversity.

 

Our vinaigrettes are crafted using high-quality, locally sourced ingredients and packaged in recyclable glass bottles designed for minimal environmental impact.

As we believe so strongly in giving back to the waters that sustain us, a portion of every bottle sold is donated to OceanWatch Australia which is a not-for-profit working to protect marine habitats and support sustainable seafood practices across the country.
